Ingredients:
Whole wheat flour – 2 cups
Sattu (roasted gram flour) – 1 cup
Ajwain – 1/2 tsp
Chilli powder—1/2 tsp (optional)
Cumin powder – 1/2 tsp
Ginger—1 tsp, grated (optional)
Garlic—1-2 cloves, minced (optional)
Salt – to taste
Fresh coriander leaves—2 tbsp, chopped
Water—as needed to make a dough
Ghee/oil—for cooking the paratha
Instructions:
In a mixing bowl, combine 2 cups of whole wheat flour with a pinch of salt.
Gradually add water and knead the mixture into a smooth and soft dough.
Cover the dough with a moist cloth and let it rest for 15–20 minutes.
In another bowl, combine 1 cup of sattu with cumin powder, chilli powder, ajwain seeds, grated ginger, minced garlic, fresh coriander leaves, and salt.
Add a small amount of water or mustard oil to moisten the mixture. The texture should be crumbly and not overly wet.
Divide the prepared dough into small, equal-sized balls.
Roll out each ball into a small disc, place a spoonful of the sattu mixture in the centre, fold the edges over, and seal it into a ball.
Gently roll out the stuffed dough into a flat, even circle, forming a paratha.
Heat a tawa over medium heat.
Place the paratha on the tawa and cook until golden brown and crispy on both sides.
Serve hot with raita, pickle, or a side dish of your choice.
