Neer dosa is a thin, soft, and delicate rice crepe made with minimal ingredients, making it ideal for a light and flavourful meal. Here’s how to make light and delicious neer dosa at home:

Ingredients:

  • 1 cup rice (preferably raw rice, not parboiled)
  • 1/4 cup fresh grated coconut (optional, for added flavour)
  • Salt to taste
  • Water (as required)

Instructions:

  1. Soak the rice: Wash the rice thoroughly and soak it for about 3–4 hours in water. You can also soak it overnight for the best results.
  2. Grind the rice: Drain the soaked rice and blend it in a blender. Add the grated coconut (if using) and a pinch of salt. Gradually add water to grind the rice into a smooth, thin batter. The batter should be runny, similar to buttermilk.
  3. Prepare the dosa: Heat a non-stick tava over medium heat. Pour a ladle of the batter onto the pan. After pouring, quickly spread it in a circular motion using the back of a large spoon to form a thin, crepe-like layer. Do not flip the dosa, as neer dosa is cooked only on one side. Cover the dosa with a lid and cook for 2–3 minutes. Once it is ready, the edges will start lifting.
  4. Serve: Once cooked, gently remove the neer dosa and serve hot. Serve it with coconut chutney, sambar, or a spicy curry of your choice.
