Ramadan is an Islamic festival celebrated to commemorate the revelation of the Quran to the Prophet Muhammad. It falls in the ninth month of the Islamic lunar calendar. To observe this holy month, devotees fast strictly from dawn until dusk.

The fast prohibits devotees from consuming food or water throughout the day. After a long and tiring day of fasting, they break their fast with a delicious meal known as Iftar. Iftar meals include a variety of mouth-watering dishes that devotees eagerly enjoy.

Ramadan Special Dishes for Iftar

1. Shahi Tukda Recipe

Ingredients

  • 1 cup (150 ml) toned milk
  • 1 tbsp cornflour
  • 1 tsp cardamom powder (elaichi powder)
  • 8 slices of bread
  • 1 tbsp chopped almonds
  • Oil/Ghee for frying

For Syrup

  • 1 cup (175 g) sugar
  • 1 cup (150 ml) water

Instructions

  • Make a paste of cornflour with a little milk. Mix the milkmaid with the remaining milk.
  • Bring the milk mixture to a boil. Add the cornflour paste and stir constantly until thickened. Then, add the cardamom powder.
  • Prepare the syrup by boiling water and sugar together. Strain and set aside.
  • Cut the bread slices in half and deep-fry them in ghee until golden brown.
  • Immediately immerse the fried bread in the sugar syrup for a brief moment to ensure they remain crisp. Remove from the syrup and arrange on a serving dish.
  • Top each piece of bread with 1 tbsp of the milkmaid mixture and nuts.
  • Serve chilled!

2. Rabdi Recipe

Ingredients

  • ½ tin milkmaid
  • 1 litre toned milk
  • 100 g grated and mashed paneer

Instructions

  • In a heavy-bottomed pan, combine the milk, milkmaid, and grated paneer. Mix well.
  • Bring to a boil and cook over medium heat, stirring continuously, until it reduces to about half and reaches a pourable consistency.
  • Remove from heat and serve chilled.

3. Gulab ki Kheer Recipe

Ingredients

  • 1 tin milkmaid
  • 2 cups (300 ml) toned milk
  • ⅓ cup (50 g) ghee
  • 500 g grated and mashed paneer
  • 1½ cups shredded rose petals
  • 2 tbsp rose water

Instructions

  • In a pan, mix the milkmaid, milk, paneer, and ghee.
  • Bring to a boil.
  • Simmer for 5 minutes, then remove from the heat and let it cool to room temperature. Stir in the rose water and shredded rose petals.
  • Refrigerate and serve chilled!
