Ingredients for Kuttu Dosa

For the dosa batter

  • 1 cup Kuttu ka atta
  • ½ cup Samak rice flour
  • ½ teaspoon Sendha namak
  • 1 teaspoon Cumin seeds
  • 1-2 finely chopped green chillies
  • 1 teaspoon grated ginger
  • 2 tablespoons curd
  • 1 ½ cup water
  • Oil or ghee for cooking

For the topping (Optional) 

  • ½ cup grated paneer
  • 2 tablespoons chopped coriander leaves
  • 1 small boiled potato

Steps to prepare:

  1. Take a bowl and add kuttu ka atta, samak rice flour, sendha namak, cumin seeds, green chillies, and grated ginger.
  2. Now add dahi and mix well for the batter.
  3. Gradually add water and whisk to form a smooth, lump-free flowy batter.
  4. Let the batter rest for 20 minutes to ferment and enhance flavours.
  5. Heat a non-stick pan and drizzle some ghee on it.
  6. Pour a ladleful of batter into the centre of the tawa and spread in a circular motion to prepare dosa.
  7. Let the dosa cook for 3 minutes until crispy and golden brown.
  8. If using toppings, sprinkle grated paneer, mashed potato, and coriander leaves on top.
  9. Flip the dosa on the other side and cook for another 2 minutes.
  10. Remove from the pan and serve immediately with vrat-friendly chutneys like coconut chutney or mint yoghurt dip.
