Ingredients for making ragi cake

Dry Ingredients

1 cup ragi flour (finger millet flour)
1/2 cup all-purpose flour (maida)
1 cup powdered sugar
1/2 cup cocoa powder
1 tsp baking powder
1/2 tsp baking soda
A pinch of salt

Wet Ingredients

1 cup milk (dairy or plant-based)
1/2 cup vegetable oil (or melted butter)
1 tsp vanilla extract
1 tbsp vinegar or lemon juice

Instructions for making ragi cake

Grease a round cake pan or a pressure cooker-safe vessel with oil and line it with parchment paper.
In a large mixing bowl, sift together the ragi flour, all-purpose flour, powdered sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.
In another bowl, combine the milk, oil, vanilla extract, and vinegar/lemon juice. Mix well until combined.
Gradually add the wet ingredients to the dry ingredients, mixing gently with a spatula until there are no lumps. Do not overmix.
Preheat the pressure cooker on medium heat for 5-7 minutes without the gasket and whistle.
Place a trivet or a small stand inside the cooker.
Pour the batter into the prepared pan and place it on the trivet inside the cooker.
Cover the cooker (without the gasket and whistle) and cook on low heat for 30-40 minutes. Check for doneness by inserting a toothpick in the center; it should come out clean.
Once done, let the cake cool in the pan for 10-15 minutes. Then, transfer it to a wire rack to cool completely.

Chocolate Ganache Topping

Ingredients

1/2 cup chocolate chips or chopped dark chocolate
1/4 cup fresh cream

Instructions

Heat the cream until it just begins to simmer, then pour it over the chocolate.
Let it sit for a minute, then stir until smooth and glossy.
Pour the ganache over the cooled cake and spread evenly.
