Besan Laddoo with almonds

Ingredients:

1 cup besan
1/4 cup ghee or coconut oil
1/2 cup chopped almonds
1/4 cup jaggery, grated (or honey for a lighter option)
1/2 tsp cardamom powder
A pinch of saffron strands

Method to prepare: 

Heat ghee in a pan and add besan to roast, stir until golden brown.
Add jaggery or honey and mix it well.
Now add chopped nuts and almonds along with cardamom powder and let it mix well.
Cool down the mixture a little to prepare the balls.
Take the mix and prepare small balls.
Garnish with saffron and almonds for a delicious and healthy treat.

Quinoa and coconut laddoo

Ingredients:

1 cup quinoa
1 cup shredded coconut
1/2 cup jaggery, grated
1/4 cup almond flour
1/4 cup ghee or coconut oil
1/2 tsp cardamom powder
A handful of chopped nuts (cashews, almonds)

Method to prepare:

Wash quinoa and add it in a pan with water to boil.
Let it cook for 15 minutes and set it aside.
In another pan add ghee. Now mix quinoa along with grated coconut to roast them well.
To the mix now add jaggery for natural sweetness.
Remove from the heat and let it cool a little.
Form small balls out of the mixture and garnish with chopped nuts.

Ragi Kheer

Ingredients:

1/2 cup ragi flour
2 cups low-fat milk (or almond milk for a dairy-free option)
2 tbsp honey or jaggery
1/4 cup chopped nuts (cashews, almonds, or walnuts)
1/2 tsp cardamom powder
A handful of raisins

Method to prepare: 

In a small bowl add ragi flour with milk and mix well.
Heat the remaining milk in a pan and add the paste gently, stirring well.
For natural sweeteners add honey or jaggery to the mix.
Now add chopped nuts to the milk and cardamom powder.
