Authentic chicken biryani recipe to try at home

Chicken biryani recipe

Ingredients

For the Chicken Marinade:

500 grams of chicken, cut into pieces
1 cup yogurt
2 tablespoons ginger-garlic paste
2-3 green chillies, slit
1 tablespoon red chilli powder
1 teaspoon turmeric powder
1 tablespoon garam masala
Salt to taste
1 tablespoon lemon juice
Fresh coriander leaves, chopped
Fresh mint leaves, chopped

For the Rice:

2 cups basmati rice
4 cups water
2-3 green cardamom pods
2-3 cloves
1-2 bay leaves
1 cinnamon stick
Salt to taste
1 tablespoon ghee or oil

For the Biryani:

2 large onions, thinly sliced
3-4 tablespoons ghee or oil
Saffron strands
1/4 cup warm milk

Steps to make:

In a large mixing bowl, combine the chicken pieces with yoghurt, ginger-garlic paste, green chillies, red chilli powder, turmeric powder, garam masala, salt, lemon juice, chopped coriander, and mint leaves.
Mix well cover the bowl and let it marinate for at least 1 hour.
Rinse the basmati rice under cold water until the water runs clear to remove excess starch.
In a large pot, bring 4 cups of water to a boil. Add salt, green cardamom, cloves, bay leaves, and cinnamon stick.
Once the water is boiling, add the soaked rice. Cook the rice until it is about 70 per cent cooked and set aside. 
In a heavy-bottomed pot, heat ghee or oil over medium heat. Add the sliced onions and sauté until they turn golden brown.
Add the marinated chicken to the pot and cook on medium-high heat for about 10-15 minutes, stirring well.
Once the chicken is cooked, reduce the heat to low. Spread half of the cooked rice over the chicken.
If using saffron, dissolve the strands in warm milk and drizzle it over the rice.
Layer the remaining rice on top and garnish with fried onions, chopped coriander, and mint leaves.
Cover the pot and cook with a tight lid and apply atta for dum, set it for 20 minutes.
Turn off the heat and let it sit for another 10 minutes before opening the lid.
