1 or 2 cups Poha
2 tablespoons vegetable oil

1 small potato, peeled and diced

1 teaspoon cumin seeds

Salt, to taste
2 tablespoons lemon juice
Chopped coriander leaves, for garnish

Wash Poha under the running tap water, rinse and soak it in water for 5 minutes.
Drain excess water.
In a pan heat oil and add mustard seeds and cumin seeds.
Add chopped onion and saute until they turn translucent.
Once the onion is cooked add diced potato and cook until they turn soft and tender.
Add peanuts, and nuts such as cashews or almonds if using and cook until they splutter.
Now, add turmeric powder, salt, and soaked Poha into this.
Mix well until all the ingredients are blended into each other.
Stir-fry for 5 minutes.
Squeeze lemon juice and garnish with coriander leaves and serve hot.
