Ingredients:

1 cup Moong Dal
1 Green Chilli
1 tsp Cumin Seeds (Jeera)
A Pinch of Asafoetida (Hing)
½ tsp Salt
½ tsp Black Pepper
Paneer (for stuffing, optional)
Refined Oil

Method to prepare:

In a large bowl, soak the moong dal in water for 2 hours. 
Drain the soaked dal and transfer it to a blender. Add the green chilli, 1-inch piece of ginger, salt, black pepper, asafoetida, and cumin seeds. Blend to a smooth batter, adding water.
Heat a non-stick tawa or skillet over medium heat. Pour a ladleful of batter onto the hot surface and spread it.
Drizzle ½ tsp of olive oil around the edges of the chilla. Cover and cook for about a minute.
Carefully flip the chilla and cook the other side, pressing gently for even cooking. You can also add filling of paneer in the chilla.
Your Moong Dal Chilla is now ready! Serve hot with green chutney for a delicious snack or meal.

2-3 Medium Red Potatoes
Oil
Chaat Masala

Method to prepare: 

Rinse the potatoes under cold water a few times, then peel and chop them into small, bite-sized cubes.
Heat oil in a frying pan or kadai over medium heat. Once hot, add the potato cubes.
Fry the potatoes until they turn golden brown and crispy, about 8-10 minutes. While the potatoes are still hot, transfer them to a mixing bowl. Sprinkle with chaat masala, then drizzle with dhaniya or pudhina chutney and a squeeze of fresh lemon juice, if desired.
Toss gently to coat the potatoes evenly.

1 cup White Matar (Safed Matar), soaked
½ tsp Turmeric Powder
1 tsp Salt
3 cups Water
2 tbsp Oil
½ tsp Cumin Seeds

2 Green Chillies, finely chopped
1 inch Ginger, grated
1 tsp Chilli Powder
1 tsp Coriander Powder
½ tsp Cumin Powder
1 tsp Black Salt
1 tsp Chaat Masala
1 tsp Garam Masala
1 Small Onion, finely chopped
1 Tomato, finely chopped
Pudhina (Mint) Chutney
Fresh Coriander, finely chopped

Method to prepare:

In a pressure cooker, combine the soaked white matar, turmeric, and salt.
Add 3 cups of water and pressure cook for 5 whistles. Once done, set aside to cool.
In a kadai, heat 2 tbsp of oil over a low flame.
Add the cumin seeds and a pinch of hing, allowing them to splutter.
Add the chopped green chillies and grated ginger, sautéing until fragrant.
Now add turmeric, chilli powder, coriander powder, cumin powder, black salt, chaat masala, and garam masala.
Add 2 tbsp of water to the spice mixture and cook for a minute. Then, stir in the boiled matar.
Mix well and adjust the consistency as needed. Let it simmer for about 5 minutes to allow the flavours to meld.
Transfer the matar mixture to a serving plate with chopped onion, tomato, and a drizzle of pudhina chutney.
Finish with fresh coriander and a sprinkle of chaat masala. Enjoy your delicious Matra Chaat!
