Andhra-style tomato peanut chutney
Ingredients
2 medium-sized ripe tomatoes
1/2 cup roasted peanuts
2–3 dried red chillies (adjust to taste)
2–3 garlic cloves
A small piece of tamarind (or 1/2 tsp tamarind paste)
1 tsp mustard seeds
8–10 curry leaves
2 tbsp oil
Salt to taste
Steps to prepare at home
Take a pan and heat some oil. To this, add garlic, dried red chillies, and chopped tomatoes.
Take a blender and add roasted tomatoes, peanuts, tamarind and salt.
Add some water and blend well to form a thick paste.
In the same pan, heat another tablespoon of oil. Add mustard seeds and curry leaves.
Pour the tempering over the blended chutney and mix well.
Serve this delicious chutney with idli, dosa or any other South Indian dish.
