Ingredients

For roasting

  • 1 tbsp ghee (clarified butter)
  • 10 cashew nuts, halved
  • 2 tbsp raisins

For the sheera

  • 1 tsp ghee 
  • 1 cup rava (semolina/suji) – preferably coarse variety
  • 1 cup fresh pineapple, finely chopped
  • 1 cup sugar
  • 3 cups water
  • 3 drops yellow food colour (optional, for a vibrant look)
  • ½ cup ghee (clarified butter)
  • ¼ tsp cardamom powder

Step 1: Roasting the nuts & dry fruits

  1. Heat 1 tbsp ghee in a pan on a low flame.
  2. Add cashew nuts and raisins, roasting them gently until the cashews turn golden brown and the raisins puff up.
  3. Once done, remove from the pan and set aside.

Step 2: Roasting the semolina (Rava)

  1. In the same pan, add 1 cup semolina (rava) and roast it well in the remaining ghee.
  2. Stir continuously on low flame for at least 5 minutes or until the rava emits a nutty aroma and turns slightly golden.
  3. Once roasted, transfer the semolina to a plate and keep it aside.

Step 3: Cooking the pineapple

  1. In a large kadai (wok), heat 1 tsp ghee and add 1 cup of chopped pineapple.
  2. Sauté for 3 minutes, allowing the pineapple to soften and release its natural aroma.
  3. Stir in ¼ cup sugar and 3 cups water, mixing well to dissolve the sugar. (You can adjust the sugar quantity based on the sweetness of the pineapple.)
