Procedure to Prepare Fluffy Rice Flour Roti

This recipe is easy to follow and results in soft, fluffy rotis that pair perfectly with your favorite curries and vegetables.

Boil Water:

In a vessel, bring 1 1/4 cups of water to a boil.
Keep a quarter cup of water aside in a bowl.

Prepare Dough:

Reduce heat and add salt and 2 teaspoons of oil to the boiling water.
Add 1 cup of rice flour and mix well.
Turn off the heat, cover the dough, and let it sit for 5 minutes to soften.

Knead Dough:

Transfer the dough to a bowl and knead until it becomes soft like chapati dough.
Cover and let it rest for 15-20 minutes to allow the dough to swell and set.

Roll the Roti:

Heat a pan on the stove.
Take a portion of dough, about the size of a lemon, and form a round ball.
Wrap the ball in dry rice flour and place it on the rolling board.
Flatten it slightly with your hand, then roll it out with a rolling pin, pressing the edges, into a thin roti.

Cook the Roti:

Carefully lift the roti and place it on the hot griddle.
Cook until the bottom surface is done, then flip it over.
Cook the other side, and flip again if needed.
Apply light pressure on the edges with a ladle or spoon while rotating until the roti is light brown on both sides.

Serve:

Remove the cooked roti from the griddle and keep it on a plate covered with a cup or aluminum foil.
Continue to cook and cover all rotis in the same manner.
