Authentic Kerala-style Avial recipe: Step-by-step guide to the classic dish

New Delhi: Avial, also known as Aviyal, is a traditional Kerala dish made with a variety of vegetables cooked in a mildly spiced coconut mixture. Ingredients for Avial Curry

5 cups mixed vegetables (carrot, yam, raw banana, drumstick, potato, cucumber, white pumpkin, beans, and snake gourd)
½ cup thick curd
2 tbsp coconut oil
2 slit green chillies
½ tsp turmeric powder
Salt to taste
A few curry leaves
1 cup water

To Grind

½ cup grated coconut
1 tsp cumin seeds
1 tsp red chilli powder
2 green chillies
A few curry leaves

Method for making Avial curry

Chop the vegetables into 3-inch long, ½-inch wide strips.
In a wide pan, heat 2 tbsp of coconut oil and add the slit green chillies. Layer the vegetables one by one.
Sprinkle ½ tsp turmeric powder and salt over the vegetables.
Pour in 1 cup of water and cover the pan. Cook on low heat. Once steam begins to escape, stir the vegetables and cover again.
Grind the coconut, green chillies, cumin seeds, red chilli powder, and ½ tsp turmeric powder into a coarse paste.
When the vegetables are tender but not mushy, add the coconut paste and mix well.
Whisk the curd and stir it into the vegetables.
Finish by adding 2 tbsp coconut oil and fresh curry leaves. Mix well and switch off the flame.

Important tips

Use fresh, thick curd rather than sour curd.
The coconut mixture should be coarsely ground, not finely blended.
You may add raw mango if desired; if so, skip the curd.
