Ingredients:
Assorted seasonal vegetables (pumpkin, brinjal, potatoes, carrots, beans, etc.)
Oil or ghee
Cumin seeds, asafoetida, green chillies, ginger, turmeric powder, red chilli powder
Coriander powder, garam masala, and salt
Fresh coriander for garnish

Wash all the vegetables and dice them properly.
Take a large pan and add oil to it.
Now add cumin seeds, hing, green chillies, and ginger.
Add spices such as turmeric, red chilli powder, and salt while cooking.
