For Kachori:
1 cup maida
2 tbsp ghee or oil
1/2 cup moong dal
1/2 tsp cumin seeds (jeera)
1/2 tsp saunf
1/4 tsp asafoetida (heeng)
1 tsp red chilli powder
1 tsp coriander powder
Salt to taste
Oil for frying
For Kadhi:
1 cup yoghurt
2 tbsp besan
1 tsp mustard seeds (rai)
1 tsp cumin seeds (jeera)
2 dry red chillies
A pinch of asafoetida (hing)
1 tsp turmeric powder
1 tsp red chilli powder
Curry leaves
Salt to taste
2 cups water
Oil for tempering
Steps to Prepare Kachori with Kadhi:
In a large mixing bowl, add the all-purpose flour, ghee, and a pinch of salt. Mix well until the flour is crumbly.
Add water to th mixture and knead a dough. Let it rest for 20 minutes.
Wash well and soak moong dal for 2 hours.
Heat oil in a pan and add cumin seeds, fennel seeds, and asafoetida.
After this add moong dal, red chilli powder, coriander powder, and salt. Let it cook for 10 minutes.
Divide the dough into rough balls and fill the moong filling in the centre.
Now seal it and flatten it to make kachoris.
Heat pan in oil and add kachori for deep frying
Let them turn golden brown and crispy.
In a mixing bowl, whisk together curd, gram flour, turmeric powder, red chilli powder, and salt. Add 2 cups of water and whisk until smooth.
Heat oil in a pan, add mustard seeds, cumin seeds, dry red chillies, asafoetida, and curry leaves. Now add curd mix.
Bring it boil for 15 minutes, and serve hot pouring over the kachori.
