Ghevar is a traditional dessert that’s especially popular during the festival of Raksha Bandhan This disc-shaped delicacy is made from flour, ghee, and sugar syrup, and is often garnished with rich toppings like saffron, nuts, and silver leaf. It has a unique texture, crispy on the outside and soft on the inside, making it a favourite treat during celebrations.
Malai Ghevar recipe
Ingredients:
1 cup all-purpose flour (maida)
1 cup chilled milk
1/2 cup ghee (clarified butter)
1/2 cup water
1/4 tsp baking powder
A pinch of saffron strands (optional)
A pinch of cardamom powder (optional)
Ingredients for the Sugar Syrup:
1 cup sugar
1/2 cup water
1/4 tsp cardamom powder
A few saffron strands (optional)
Ingredients for Garnishing:
Chopped nuts (almonds, cashews, pistachios)
Edible silver leaf (optional)
Method to prepare:
In a bowl, mix the flour and baking powder.
Gradually add chilled milk, water, and ghee to the flour while stirring continuously to form a smooth batter. The consistency should be like a pancake batter.
Optionally, add saffron strands and cardamom powder for flavour.
Heat the Oil: Heat ghee or oil in a deep, round pan or a cake tin. It should be enough to submerge the Ghevar.
Instructions to cook the Ghevar:
Heat ghee or oil in a deep, round pan or a cake tin. It should be enough to submerge the ghevar.
Once the oil is hot, pour a ladleful of batter into the centre of the pan. The batter should spread out and form a honeycomb-like pattern.
Cook on low to medium heat until the edges turn golden brown.
Soak the fried Ghevar in the warm sugar syrup for a minute, then lift out and place on a plate.
Garnish with chopped nuts and edible silver leaf if desired.
