Kakori Kebab recipe
Ingredients
Mutton- boneless 800 gm
Raw papaya- 50 gm
Fat- 150 gm
Roasted gram flour- 80 gm
Red chilly powder- 20 gm
Salt to taste
Ginger paste- 30 gm
Garlic paste- 30 gm
Cloves- 4-5 no.
For Kakori Masala
Black pepper- 5 gm
Cloves- 5 no.
Small cardamom- 10 gm
Big cardamom- 5 gm.
Rose petal- 10 gm
Khus-khus- 5 gm
Cashewnuts- 15 gm
Mace –1 gm
Nutmeg- 1 gm
Brown onions- 20-30 gm
Kashmiri mirch- 25 gm
Method to prepare Kakori Kebab:
Mince the mutton into a fine paste, and pass through a mincer 4-5 times.
For making masala, slice the onion and fry it till golden brown add all the ingredients of masala and grind it to a fine paste.
Grind raw papaya into a fine paste.
Mix the raw papaya paste with the mutton mince, add roasted gram flour, salt, ginger & garlic paste and red chilly powder. mix it properly
Add masala to the above mixture and mix it properly.
Make a well in the centre of the mixture, put live coal, 4-5 no. of cloves and fat. smoke the entire mixture for 10-15 minutes and cover it with a lid.
Divide the prepared mixture into 60 gm equal portions and wrap it around the kebab skewers and cook on live coal till golden brown.
Remove the kebab from the skewers and serve hot with onion, lemon and mint chutney.
