Ingredients for Veg Kebabs

For the Kebab Mixture:

  • 1 cup boiled & mashed potatoes
  • ½ cup boiled chickpeas or kidney beans, mashed
  • ½ cup grated paneer or crumbled tofu
  • ½ cup finely chopped mixed vegetables (carrot, capsicum, beans, peas)
  • 2 tablespoons besan
  • 1 teaspoon ginger-garlic paste
  • 1 green chilli
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • ½ teaspoon garam masala
  • ½ teaspoon chaat masala
  • Salt to taste
  • Fresh coriander leaves
  • 1 tablespoon lemon juice
  • Oil for shallow frying

Steps to prepare veg kebab

  1. In a big bowl take boiled mashed potatoes, mashed chickpeas (or rajma), and grated paneer.
  2. Add chopped vegetables, roasted gram flour, ginger-garlic paste, green chilli, and spices. Mix well.
  3. Knead the mixture slightly to bind everything together to form a kebab.
  4. Take small portions of the mixture and shape them into round or oval kebabs.
  5. Place the kebabs on a plate and refrigerate for 15-20 minutes to firm up.
  6. Heat oil in a pan and shallow-fry the kebabs until golden brown on both sides.
  7. You can also bake them at 200°C for 15-20 minutes or air-fry them for a healthier option.
  8. Once crispy, remove from heat and serve hot with chutney or dips.
