2 Raw Bananas cubed
1 tsp Salt
1 tsp Ginger garlic paste
3 tbsp Oil
2 chopped Onions
1 tsp Red Chilli powder
1/2 tsp Turmeric powder
1 tsp Coriander powder
1 small bunch chopped Coriander Leaves
1-2 chopped Green Chillies
How to Make Hyderabadi Bagara Baingan with Raw Bananas
Heat Oil: In a pan, heat oil over medium heat.
Add Aromatics: Add ginger-garlic paste and green chillies. Sauté for 1 minute.
Add Spices: Add the remaining spices to the pan.
Sauté Onions: Add sliced onions and sauté until they turn translucent.
Cook Brinjal: Add brinjal (eggplant) cubes. Sauté until they are cooked through.
Add Coriander and Water: Mix in half of the chopped coriander leaves and half a cup of water.
Simmer: Cover and cook on low heat for 10-12 minutes.
Add Raw Bananas: Add cubed raw bananas, mix well, and cook for another 10-12 minutes or as needed.
Check for Salt: Halfway through cooking, check for salt and adjust if necessary.
Add Remaining Coriander: Stir in the rest of the chopped coriander leaves.
Final Cooking: Continue to cook on low heat for an additional 5-6 minutes.
