Gumbo is a thick, flavourful stew made with a roux-based broth, a variety of proteins like chicken, sausage, shrimp, or seafood, and the “Holy Trinity” of Cajun and Creole cooking—onion, bell pepper, and celery. Gumbo Recipe

Make this hearty, wholesome gumbo at home this season! This easy recipe takes just 45 minutes to cook.

Ingredients for Gumbo

4 slices bacon, chopped
1 small yellow onion, chopped
1 small green bell pepper, seeded and chopped
2 ribs celery, finely chopped
1½ lbs chicken breasts, cut into bite-sized pieces
Salt and pepper
½ teaspoon Cajun/Creole seasoning (see notes)
2 cloves garlic, pressed or minced
¼ cup gluten-free flour (or all-purpose flour if not gluten-free)
32 oz chicken broth
28 oz crushed tomatoes
2 cups water
2 bay leaves
½ teaspoon crushed red pepper flakes (adjust to taste)
1 cup long-grain white rice (White Jasmine Rice recommended)

How to make Gumbo

Prepare the bacon:

  • Heat a large Dutch oven or soup pot over medium heat.
  • Add the bacon and cook until browned.
  • Remove the bacon and place it on a paper towel-lined plate to drain.
  • Reserve the bacon fat in the pot, adding extra virgin olive oil if necessary to make a total of 2 tablespoons of fat.
  • Sauté the vegetables:
  • Add the onions, bell peppers, and celery to the pot.
  • Season with salt and pepper.
  • Sauté for 8–10 minutes until softened.

Cook the chicken:

  • Season the chicken with salt and pepper.
  • Add the chicken and Cajun seasoning to the pot.
  • Sauté for 5 minutes.
  • Add the garlic and cook for 1 minute, stirring constantly.

Add the flour:

  • Sprinkle the flour over the vegetables and chicken.
  • Stir to combine and cook, stirring constantly, until the flour turns golden brown (about 3 minutes).
  • Add the liquids and simmer:
  • Gradually pour in the chicken broth while stirring, scraping up any browned bits from the bottom of the pot.
  • Add the crushed tomatoes, water, bay leaves, red pepper flakes, and salt.
  • Turn the heat up to high and bring the soup to a simmer.

Cook the rice:

  • Once the soup is simmering, add the rice and stir to combine.
  • Cover the pot with a lid.
  • Reduce the heat to low and simmer for 15–20 minutes, stirring occasionally, until the rice is just barely tender.

Finish the soup:

  • Stir the cooked bacon back into the soup.
  • Let the soup sit and thicken off the heat for 10 minutes.
  • Remove the bay leaves before serving.
