Raw Mangoes: 4 medium-sized
Salt: 3-4 tablespoons
Turmeric Powder: 1 teaspoon
Red Chili Powder: 2 tablespoons
Mustard Seeds: 1 tablespoon
Fenugreek Seeds: 1 teaspoon
Cumin Seeds: 1 teaspoon
Mustard Oil: 1 cup
Garlic Cloves: 6-8, finely chopped
How to make mango pickle at home:
Start by selecting raw, green mangoes. Wash them thoroughly and pat them dry with a clean cloth.
Cut the mangoes into small pieces and remove the seed.
Spread the mango pieces on a clean cloth or tray under the sun to dry. T
Let them dry for 2-3 days in the sunlight.
In a small pan, dry roast mustard seeds, fenugreek seeds, and cumin seeds.
Once roasted, grind them well in a grinder.
As the mango pieces are dried, place them in a clean glass jar.
Add salt, turmeric powder, red chilli powder, the freshly ground spice mix, and garlic.
Mix everything well with clean hands or a spoon, ensuring the mango pieces are evenly coated.
Heat mustard oil in a pan pour it over the mango mixture and mix well.
Close the jar tightly without any air passage or germs to enter.
Place it in sunlight and dry area for about 10 days, stirring daily.
Store the pickle in an airtight jar and keep it in a cool, dry place. The oil in the pickle acts as a preservative, allowing it to stay fresh for several months.
