Ingredients
- Paneer: 200g
- Butter: 1 tbsp
- Tomato puree: 1 cup
- Fresh cream: 2 tbsp
- Ginger-garlic paste: 1 tsp
- Kasuri methi: 1 tsp
- Garam masala: ½ tsp
- Mini tart shells
- Salt, sugar, red chilli powder
- Microgreens
Method
- Heat butter, sauté ginger-garlic paste, then add tomato puree.
- Cook until thick, add cream, kasuri methi, and spices.
- Toss in paneer cubes. Simmer for 5 minutes.
- Spoon into tart shells. Garnish with crushed kasuri methi and microgreens.
2. Dal Tadka Espuma with Jeera Rice Bites

Ingredients
For dal espuma:
- Toor dal: ½ cup (cooked and strained smooth)

Ingredients
- Milk: 1 cup
- Cream: 1 cup
- Sugar: 3 tbsp
- Saffron: a few strands

- Pistachios, edible silver (optional)
Method
- Heat milk, cream, sugar with saffron and cardamom.
- Once warm, add bloomed gelatin. Stir well, strain.
