Ingredients:
For cooking Rajma:
1 cup red kidney beans (rajma), soaked overnight
4 cups water
1 tsp salt
1 bay leaf
For the Curry:
2 tbsp oil or ghee
1 tsp cumin seeds
1 large onion, finely chopped
2 medium tomatoes, pureed
1 tbsp ginger-garlic paste
1 tsp turmeric powder
1 tsp red chilli powder
1 tsp coriander powder
½ tsp garam masala
½ tsp kasuri methi (dried fenugreek leaves, optional)
Salt to taste
Fresh coriander leaves for garnish
Instructions:
Cook the Rajma:
Rinse the soaked kidney beans.
In a pressure cooker add beans, water, salt, and bay leaf and let it cook for 15-20 minutes or until soft.
Drain and keep the beans and water aside.
Prepare the curry:
In a pan, heat oil or ghee.
Once it gets heated up, add cumin seeds and let them splutter.
Add chopped onions and saute them until golden brown.
Once the onions are cooked, add ginger-garlic paste and cook until it starts giving fragrance.
Add the pureed tomatoes and cook until the mixture starts leaving the oil.
Add turmeric, red chilli, and coriander powders and cook for 1-2 minutes.
Combine:
Add the cooked kidney beans or rajma along with the water.
Let it boil for 15-20 minutes.
Mash some of the kidney beans to get a creamy texture.
Add garam masala kasuri methi and salt as per the taste.
Garnish with coriander and serve hot with steamed rice or roti.
