Tasty Sabudana Snacks for Navratri

1. Sabudana Sweet Potato Khichadi Bhel

This sabudana bhel is a fusion of sweet and savoury flavours, perfect for an evening snack during Navratri. Combining sabudana, sweet potato, and farali chivda, this recipe is a refreshing change from the usual khichdi.

Ingredients

½ cup soaked sabudana
1 cup steamed sweet potato
2 tsps ghee
2 green chillies
2 tsps roasted cumin powder
2 tsps red chilli powder
½ tsp black pepper powder
3 tablespoons powdered sugar
1 lemon juice
Salt/Rock Salt to taste
¼ cup coriander leaves
1 cup farali chivda
½ cup pomegranate
1 cup wafers farali

Instructions

Steam the sweet potato with ghee in a cooker. Once steamed, chop the sweet potato and add it to the soaked sabudana. Add green chillies and ghee to the sabudana mixture and mix well.
Grease a plate with half a teaspoon of ghee and spread the prepared sabudana mixture onto it.
Place the plate into a steamer. After 5 minutes, stir the mixture well. Continue to check and stir the mixture regularly.
After 15 minutes, your sabudana will be ready. Now add all the spices, powdered sugar, and roasted groundnut powder. Mix in the coriander, farali chivda, peanuts, and pomegranate.
Serve this Sabudana Sweet Potato Khichadi Bhel hot! You can also garnish it with masala wafers and green chillies.

2. Sabudana Chips

1 cup Sabudana
4 cups of water
1 tsp Salt
1 tsp Black Pepper
1 tsp Lemon Juice
2-3 drops of food colouring (optional)
Oil for frying

Instructions

Soak the sabudana in water overnight.
Boil water in a pan. Add the soaked sabudana and season it with salt, pepper, and lemon juice.
Let it cook for 10-15 minutes. Once the sabudana has expanded and the texture is mushy, remove it from the flame.
Spread a plastic sheet and pour out the sabudana mixture using a spoon. The portions should be the size of the chips you desire. Make sure to leave an equal distance between each serving.
Let them dry in the sun for almost a day. The chips are ready and can be stored in an airtight container for about a month.
Heat oil in a kadhai. Deep fry the chips. Apply some pressure to each chip while frying, allowing the sabudana to pop.
The chips are ready! Enjoy them as an alternative to regular chips or have them with meals.

3. Sabudana Bonda

For a filling snack, try these sabudana bondas. Perfect for tea-time, these fritters are soft on the inside and crispy on the outside.

Ingredients

1 cup Sabudana
1 cup Buttermilk
½ tsp Red Chilli
2 tbsp Coconut powder
3 tbsp Kuttu Flour
Coriander leaves
Salt/rock salt to taste
Ginger

Instructions

First, take sabudana and add buttermilk, salt, chilli, and ginger to it, then let it rest overnight to soak in the flavours.
Drain the excess liquid and add kuttu flour, coriander, and coconut powder, forming a semi-soft dough.
Shape small laddoos out of the dough and deep fry them until golden brown.
Once done, enjoy them with a cup of chai! You can also prepare a dip or chutney to accompany them.

4. Sabudana Chivda/Namkeen

This is a dry snack made with sabudana, peanuts, raisins, and cashews. It’s easy to make in bulk and can be stored for days—perfect for when hunger strikes during fasting.

Ingredients

½ cup sabudana
¼ cup peanuts
¼ cup raisins
¼ cup cashews
¼ tsp red chili powder or 1 green chili (chopped)
½ tsp powdered sugar or as required
Rock salt (edible and food grade) as required
Oil for deep frying

Instructions

In a metal frying strainer, take the nylon sabudana pearls.
Heat oil for deep frying in a kadai/wok. Heat enough oil so that the pearls can be completely immersed. Place the metal frying strainer with 2 to 3 tbsp of sabudana pearls in the oil. Don’t overcrowd the pearls, as it will prevent even frying.
When the pearls come into contact with the hot oil, they will start puffing up.
With a spoon, keep turning them around to ensure they fry evenly.
The pearls must be fried thoroughly. Even if they look crisp and done from the outside, they may still be hard inside. To check for doneness, bite into a few pearls. If they are not cooked in the centre, continue frying. Once done, remove and drain the fried pearls on kitchen paper towels.
Now, fry raw peanuts in the same way until they change colour and become crunchy. Similarly, fry the cashews and raisins.
When frying the raisins, as soon as they puff up, remove them from the oil.
Once the dry fruits are fried and golden, drain them on paper towels.
You can add rock salt, powdered sugar, and red chilli powder, then mix everything together. Alternatively, after the chiwda/namkeen mixture cools, place all the fried ingredients in a jar, sprinkle with salt, powdered sugar, and red chilli powder, and shake the jar to mix the seasonings.
Cover the jar tightly and shake it to mix the seasonings with the sabudana and dry fruits. Store the sabudana chivda at room temperature.
Serve sabudana chivda plain whenever required!
