- ½ tsp cumin seeds
- Salt, garam masala, oil
For Jeera Rice:
- 1 cup basmati rice
- 1 tsp cumin seeds
- 1 tbsp ghee
- Salt
Method to prepare:
- Take a pan and saute cumin seeds along with oil, green chilli, and ginger-garlic paste.
- Now add onion, methi leaves until soft.
- Add paneer, salt, garam masala, and cream, and cook it for 5 minutes.
- For rice, take a pressure cooker and add washed rice.
- Now, add salt and mix gently.
- Cook properly and serve hot with salad and papad.
2. Tandoori Soya Chaap Masala with Laccha Paratha
Ingredients:
- 6 soya chaaps
- ½ cup curd
- 1 tsp red chilli powder, garam masala, and tandoori masala
- 1 tsp ginger-garlic paste
- 1 onion, tomato puree
- 2 tbsp cream
- Oil
- Kasuri methi
Method to prepare:
- Take a bowl and marinate chaap in curd, spices, along with ginger-garlic for 1 hour.
- Now, take a non-stick pan and fry.
- Sauté onion and tomato, add cream, spices, and grilled chaaps. Simmer for 10 mins.
- Serve with flaky laccha paratha or butter naan.
3. Amritsari Chole with Kulcha
Ingredients:
- 1 cup soaked chickpeas
- 2 onions, 2 tomatoes
- 1 tsp ginger-garlic paste
- 1 tsp chole masala, cumin, amchur
- 1 black tea bag
- Fresh coriander, ghee
Method to prepare:
- Pressure cook chole with a tea bag until soft.
- In another pan, sauté the onion, garlic, and tomatoes.
- Add spices and mix the chole in. Simmer until thick and dark.
- Serve with kulcha or bhature and onion rings.
4. Rajma Galouti Kebab Wraps
Ingredients:
- 1 cup cooked rajma
- 2 tbsp roasted besan
- 1 onion, green chilli, coriander
- Chaat masala, garam masala
- Soft roti or roomali roti
- Mint chutney and onion slices
Method to prepare:
- Mash rajma with spices, onion, and besan.
- Shape into kebabs and shallow-fry till crisp.
- Spread mint chutney on roti.
- Now, place kebabs and onions, roll up and serve warm.
5. Mango Phirni for Dessert
Ingredients:
- ½ cup basmati rice
- 3 cups milk
- ½ cup mango pulp
- ¼ cup sugar
- Cardamom powder, saffron, chopped pistachios
Method to prepare:
- Boil milk, add ground rice and cook on low till thick.
- Add sugar, cardamom, and saffron.
- Cool and stir in the mango pulp.
- Chill in earthen bowls and garnish with pistachios.
