4 medium-sized potatoes (boiled and cubed)
2 tbsp oil
1 tsp cumin seeds
1 onion (finely chopped)
2 tomatoes (chopped)
1 green chili (chopped)
1 tsp ginger-garlic paste
1 tsp turmeric powder
1 tsp red chili powder
1 tsp coriander powder
Salt (to taste)
Fresh coriander (for garnish)
Water (as needed)

Prepare the Puri Dough:

In a bowl, mix wheat flour, salt, and oil.
Gradually add water and knead into a smooth dough.
Rest the dough for 15 minutes.

Make Puris:

Divide the dough into small balls.
Roll out each ball into a small circle.
Heat oil in a pan and fry the puris until they puff up and turn golden brown.
Drain on paper towels.

Prepare Aloo Sabzi:

Heat oil in a pan and add cumin seeds.
Once they splutter, add chopped onion and sauté until golden.
Add ginger-garlic paste and sauté for a minute.

Pour in water to adjust the consistency and simmer for 5-7 minutes.
