New Delhi: Tehri is a beloved one-pot rice dish originating from Uttar Pradesh. It is a comforting and flavourful meal that holds a special place in households across the state. Known for its simplicity and delicious flavours, Tehri is a vegetarian dish made with rice, seasonal vegetables, and an assortment of spices. Unlike biryani, Tehri is relatively simple and quick to prepare. Using everyday ingredients, it has become a staple in many homes across Uttar Pradesh.

This dish is particularly enjoyed during winter when vegetables such as peas, carrots, cauliflower, and potatoes are available in abundance. Tehri Recipe

Here’s a simple and flavourful Tehri recipe, a popular one-pot rice dish from North India:

Ingredients:

  • Basmati rice: 1 cup (washed and soaked for 20 minutes)
  • Potato (cubed): 1 medium
  • Green peas: ½ cup
  • Cauliflower florets: 1 cup
  • Green chillies: 2 (slit)
  • Oil/ghee: 2 tbsp
  • Cumin seeds: 1 tsp
  • Turmeric powder: ½ tsp
  • Red chilli powder: ½ tsp
  • Garam masala: ½ tsp
  • Ginger: 1 tsp (peeled and chopped)
  • Salt: to taste

Instructions:

  1. Wash and soak the rice for 15–20 minutes. For brown basmati rice, soak for 30–45 minutes.
  2. In a pan, heat ½ tbsp oil and 1 tsp ghee. Fry the potatoes and cauliflower on low heat for 4–7 minutes until tender and golden.
  3. In a pressure cooker or thick-bottomed pan, heat the remaining oil and ghee. Add the cumin seeds and let them sizzle.
  4. Add the soaked rice and sauté for 1–2 minutes until aromatic.
  5. Add the sautéed vegetables, peas, and chopped ginger to the rice. Mix gently to avoid breaking the grains.
  6. Stir in the coriander powder, garam masala, turmeric powder, red chilli powder, and salt. Combine well.
  7. Pour 2 cups of hot water, adjusting for the type of rice used. For brown basmati, water ratios and cooking times may vary.
  8. Pressure cook for one whistle and let the pressure release naturally.
  9. Serve hot with curd, raita, or papad.

Tehri, when paired with cool cucumber or bathua raita, tangy pickles, or crispy papad, makes for a delicious and satisfying meal.
