Red chilli powder: To taste
Coriander leaves: Freshly chopped for garnish

Method

 Heat a generous amount of oil in a pan over medium heat.
Add ginger-garlic paste and sauté until aromatic.
Toss in sliced onions and slit green chillies, cooking until the onions soften and turn a light pink.
Gently crack the eggs over the sautéed onions, keeping the yolks intact. Cover the pan with a lid and allow the eggs to cook until the whites are set and yolks are firm.
In the meantime, prepare the flavorful Ellipaya Karam by crushing garlic, red chilli powder, and salt into a smooth paste using a mortar and pestle.
