Method for making chocolate modak

Heat 1 teaspoon of ghee in a pan over medium heat. Add the mawa and sauté for 2 minutes.
Mix in the sugar, which will melt quickly. Reduce the heat to low.
Stir continuously as the mixture cooks on low heat. After about 5 minutes, it will begin to bubble.
Sift in the cocoa powder and, if desired, add a sprinkle of cardamom powder. Combine thoroughly.
Continue cooking on low heat until the mixture starts to pull away from the sides of the pan and forms a ball when rolled. Avoid over-cooking to prevent a chewy texture.
