Kale chane recipe

Ingredients (Serves 15)

  • Black Chickpeas (Kale chane): 750g (3 cups)
  • Water: 6 cups
  • Salt: 2 tsp
  • Tea Bags: 2
  • Oil or Ghee: 6 tbsp
  • Cumin Seeds (Jeera): 2 tsp
  • Bay Leaves: 2
  • Onions: 4 medium
  • Ginger-Garlic Paste: 2 tbsp
  • Green Chilies: 3
  • Tomatoes: 5 large
  • Turmeric Powder:  1 ½ tsp
  • Coriander Powder: 2 tbsp
  • Red Chili Powder: 2 tsp
  • Garam Masala: 1 ½ tsp
  • Amchur: 2 tsp
  • Kasuri Methi: 2 tsp
  • Black Salt: 1 tsp
  • Water: 3 cups
  • Fresh Coriander Leaves: ¼ cup
  • Julienned Ginger: 2 tbsp

Steps to prepare at home:

  1. Wash the black chickpeas thoroughly and soak them in water overnight.
  2. Drain the water and transfer to a cooker.
  3. Add 6 cups of water with salt and tea bags.
  4. Pressure cook on 7 whistles until chickpeas turn soft.
  5. Once done, discard the tea bags and keep the chickpeas aside.
  6. Heat the ghee in a pan and add cumin seeds and bay leaves.
  7. Add finely chopped onions and saute well.
  8. Add ginger-garlic paste and chopped green chilies. Cook for a minute.
  9. Pour in the tomato puree and cook until the oil starts separating.
  10. Add turmeric, coriander powder, red chilli powder and black salt.
  11. Cook the masala well for 4 minutes on low flame.
  12. Add the boiled chickpeas along with 3 cups of water.
  13. Stir well and let it cook for 15 minutes.
  14. Add garam masala, amchur, kasuri methi.
  15. Turn off the flame and let it rest for 10 minutes.
  16. Garnish with fresh coriander and serve hot with puris.
