Ingredients
For Dosa Batter:
- 2 cups rice
- ½ cup urad dal
- 1 tbsp fenugreek seeds
- Salt to taste
- Water
For Masala (Potato Filling):
- 4 boiled potatoes
- 1 large onion
- 1 tsp mustard seeds
- 1 tsp chana dal
- 1 tsp urad dal
- 1-2 green chillies
- 1-inch ginger
- A few curry leaves
- ¼ tsp turmeric
- Salt to taste
- 1 tbsp oil
For Coconut Chutney:
- 1 cup grated fresh coconut
- 2 tbsp roasted chana dal
- 1 small green chilli
- 1 small piece of ginger
- Salt to taste
- Water
For Tempering:
- 1 tsp mustard seeds
- A few curry leaves
- 1 tsp oil
Steps to prepare at home:
- Wash rice and urad daal along with fenugreek seeds in running water.
- Soak them well overnight.
- Grind all soaked ingredients to form a smooth batter using only a little water.
- Now, place the batter in a warm place to ferment naturally overnight.
- Heat oil in a pan, add mustard seeds, chana dal, urad dal, green chillies, curry leaves and ginger.
- Add sliced onions and fry until golden brown.
- Mix turmeric, mashed potatoes, and salt and cook for 5 minutes.
- For the chutney, take coconut, roasted chana dal, ginger, salt and water in a grinder.
- Blend into a smooth paste for chutney consistency.
- Take a pan and add oil, mustard seeds and curry leaves. Let it splutter.
- Pour over the blended chutney for tempering.
- For the dosa, take a non-stick pan and put it on a medium flame.
