New Delhi: A legendary dish from the royal kitchens of Lucknow, Mutton Galouti Kebab is an incredibly delicious and flavourful dish, known for its melt-in-mouth flavours, rich and soft texture with aromatic flavours. The word Galouti means ‘soft’ in Urdu, and these kebabs truly live up to their name. Originally created for a toothless Nawab who wanted to enjoy kebabs without chewing, this dish is made using finely minced mutton infused with a blend of exotic spices and tenderized to perfection with raw papaya paste.

Unlike other kebabs, Galouti Kebabs are unique because they do not require skewers or grilling. Instead, they are shallow-fried in ghee, giving them a crispy outer layer while keeping them juicy inside. For those who love kebabs, galouti kebabs are a must try, here is an easy recipe to try at home for authentic Lucknowi flavours and richness.
