1 cup ragi flour (finger millet flour)
½ cup whole wheat flour
½ cup grated beetroot
½ cup grated carrot
1 green chilli (finely chopped, optional)
1 teaspoon cumin seeds
1 teaspoon ginger (grated)
2 tablespoons coriander leaves (finely chopped)
Salt to taste
Water as needed (for kneading)
Oil or ghee (for cooking)
Instructions
In a mixing bowl, take ragi flour, whole wheat flour, grated beetroot, grated carrot, chopped green chilli, cumin seeds, grated ginger, and coriander leaves.
Add salt to taste and mix all the ingredients thoroughly to knead to make a soft dough.
Add a few drops of oil to make it smoother and leave it for 10–15 minutes.
Divide the dough into equal-sized balls.
Roll out these balls into a medium-sized Paratha.
Be very gentle while rolling out the Paratha with the rolling pin as the ragi flour dough can be slightly fragile and can break.
Heat the tawa over medium heat and place the rolled paratha on the hot tawa.
