With its soft paneer cooked alongside bell peppers, onions, tomatoes, and a blend of freshly ground spices known as Kadai masala, it’s no wonder this dish is a favorite. This restaurant-style Kadai Paneer recipe is not only delicious and spicy but also pairs perfectly with naan and parathas.

Kadai Paneer stands out due to its unique preparation and the special Kadai masala. This masala, a mix of dry roasted and ground spices, imparts the signature flavors to the dish. The curry itself consists of paneer, or Indian cottage cheese, cooked in a savory onion and tomato gravy with bell peppers and Kadai masala.

The name “Kadai Paneer” comes from the traditional Indian cookware used to prepare it: the Kadai. This Indian wok, characterized by its steeper sides and thick bottom, is ideal for cooking dishes that require a bit of extra stirring and frying. However, if you don’t have a Kadai, don’t worry—you can still make this delicious dish using a regular wok or cooking pan.

Here’s the perfect recipe to make restaurant-style Kadai Paneer at home.

Ingredients for Kadai Masala

3 tbsp coriander seeds
3 tsp cumin
3 tsp fennel
4 dried red chillies
4 dried red chillies
3 tsp pepper

Ingredients for Sabzi

3 tbsp oil
3 tsp ghee
1.5 tsp cumin
7 cloves garlic, finely chopped
1.5 inch ginger, finely chopped
3 onions, finely chopped
¾ tsp turmeric
1.5 tsp chilli powder
1.5 tbsp kadai masala
1.5 tsp salt
4 tomatoes, chopped
3 tbsp cream
1.5 tsp kasuri methi, crushed
3 tbsp coriander, chopped
1.5 inch ginger, julienne cut

Ingredients for tadka

3 tsp oil
1.5 onions
1.5 capsicums
1.5 tomatoes
1.5 paneer
1.5 tsp garam masala

Preparation of kadai masala

In a pan, take 3 tbsp coriander seeds, 3 tsp cumin, 3 tsp fennel, 4 dried red chillies, and 3 tsp pepper.
Dry roast on low flame until the spices turn aromatic.
Cool completely, and grind to a coarse powder. Kadai masala is ready.

Preparation of sabzi

In a kadai, heat 3 tbsp oil, 3 tsp ghee, and sauté 1.5 tsp cumin until it turns aromatic.
Now add 7 cloves garlic, 1.5 inch ginger, 3 onions, and saute until the onions turn golden brown.
Further, keeping the flame low, add ¾ tsp turmeric, 1.5 tsp chilli powder, 1.5 tbsp kadai masala, and 1.5 tsp salt.
Saute on low flame until the spices turn aromatic.
Now add 4 tomatoes and sauté until the tomatoes turn soft and mushy.
Continue to cook until the oil separates from the sides.

Preparation of tadka

In a pan, take 3 tsp oil. Add 1.5 onions, 1.5 capsicums, 1.5 tomatoes, 1.5 paneer, and 1.5 tsp garam masala.
Stir fry on high flame until the vegetables turn crunchy.
Transfer the stir-fried vegetables, and add half a cup of water.
Mix well and cook for 2 minutes.
Further, add 3 tbsp cream, 1.5 tsp kasuri methi (crushed), 3 tbsp coriander, and 1.5 inch ginger. Mix gently.

Finally, Kadai Paneer Recipe is ready to enjoy with roti or naan.
