- Salt to taste
- 1 tsp Eno fruit salt

Instructions:
- Heat a pan on medium flame and dry roast the suji until it turns light golden brown.
- In the same pan, heat ghee or oil. Add mustard seeds, green chillies and ginger.
- In a bowl, combine the roasted suji, turmeric powder, and salt to prepare the base.
- Add yoghurt to the dry mixture and stir well for smoothness.
- Gradually add water and mix to achieve a thick, flowing batter.
- Just before steaming, add 1 teaspoon of Eno fruit salt to the batter.
- Grease your idli moulds with oil to prevent the idlis from sticking while steaming.
- Pour the batter into each mould in a steamer or pressure cooker without the weight.
- Steam the idlis for 10-12 minutes or until a toothpick inserted comes out clean.
- Remove the idlis from the moulds, garnish with fresh coriander leaves, and serve with coconut chutney or sambar.
