Ingredients:

½ cup sabudana (sago)
½ cup sama rice
1 boiled potato
Water as needed
¼ cup curd
2 finely chopped green chillies
1-inch ginger, finely chopped
2 tbsp coriander, chopped
1 tsp cumin
½ tsp crushed black pepper
2 tbsp roasted and crushed peanuts
1 tsp salt (or rock salt)

Instructions:

Step 1: Start by dry roasting ½ cup of sabudana for 4-5 minutes until aromatic.
Step 2: Allow the sabudana to cool, then transfer it to a mixer. Add ½ cup of sama rice and grind to a fine powder.
Step 3: In another bowl, blend 1 boiled potato with water into a smooth paste.
Step 4: Add the potato paste to the sabudana-sama rice mixture.
Step 5: Mix in ¼ cup of curd, chillies, ginger, cumin, pepper, roasted peanuts, salt, and coriander.
Step 6: Add 2 cups of water and stir until the batter is lump-free. Let the batter rest for 20 minutes.
Step 7: After 20 minutes, check the consistency. Add 1 cup of water if needed to make it thinner.
Step 8: Heat a pan, pour a ladle of batter, and spread it thinly. Drizzle 1 tsp of ghee on the dosa. Roast until crispy, about 2-3 minutes.
