Ingridents For Koftas

1 medium lauki (bottle gourd), peeled and grated
1 cup besan (gram flour)
1/2 cup breadcrumbs
1/2 teaspoon cumin seeds
1/2 teaspoon coriander powder
1/4 teaspoon turmeric powder
1/4 teaspoon red chilli powder
1/2 teaspoon garam masala
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons lemon juice
1/4 cup chopped coriander
Oil, for frying

Ingredients For Gravy:

2 medium onions, chopped
2 medium tomatoes, chopped
1 teaspoon cumin seeds
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
1/2 teaspoon red chilli powder
1/2 teaspoon garam masala
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons butter
2 tablespoons tomato puree
1 cup water
Fresh coriander, for garnish

Instructions for Cooking

Preparing the Koftas:

Grate the lauki and squeeze excess water from it.
Mix the grated lauki with besan, breadcrumbs, spices, herbs, lemon juice, and salt and make a slurry mixture.
Shape small cylindrical koftas out of this mixture.
Heat the oil in a deep frying pan and fry the koftas until golden brown.

Preparing the Gravy:

In a separate pan, heat oil and add cumin seeds.
Add chopped onions and sauté until golden brown.
Now, add chopped tomatoes and cook until soft.
Add spices, salt, and tomato puree to it.
Add water as per your desired consistency and simmer for 15-20 minutes.
Once the gravy thickens and the oil separates, add the fried koftas and let them simmer for 5-7 minutes.
Garnish with coriander and serve hot.
