Navratri special: How to make crunchy Kuttu Ki Pakori at home

New Delhi: Kuttu Ki Pakori is a beloved, crunchy snack traditionally enjoyed during Navratri. Prepared from buckwheat flour—commonly known as kuttu ka atta—it is a delicious and crispy treat typically consumed during fasting periods such as Navratri, Ekadashi, and Maha Shivratri. Kuttu flour is naturally gluten-free and rich in nutrients. It also serves as a tasty and energising meal option during fasts. High in fibre and protein, and loaded with essential minerals, it helps keep you fuller for longer while maintaining your energy levels.

These pakoras are made by mixing kuttu flour with mashed potatoes, green chillies, and mild spices such as black pepper and sendha namak (rock salt). The batter is deep-fried until golden brown, resulting in irresistibly crispy and flavourful fritters. For added softness and flavour, some also incorporate chopped coriander or grated bottle gourd (lauki).

Kuttu Ki Pakori Recipe

Kuttu is a widely used ingredient during vrat (fasting), especially throughout Navratri. These pakoras are delightfully crunchy, easy to prepare, and perfectly suited for fasting days.

Ingredients:

  • 1 cup kuttu ka atta (buckwheat flour)
  • 2 medium-sized potatoes (boiled and mashed)
  • 1 tsp sendha namak (rock salt)
  • ½ tsp black pepper powder
  • 1 tsp green chillies (finely chopped)
  • 1 tsp coriander leaves (chopped)
  • ½ tsp cumin seeds
  • Water (as required for the batter)
  • Oil or ghee (for deep frying)

Instructions:

1. Prepare the batter:

  • In a bowl, combine kuttu flour, mashed potatoes, sendha namak, black pepper, cumin seeds, green chillies, and coriander leaves.
  • Gradually add water to form a thick batter.

2. Heat the oil:

  • Heat ghee or oil in a deep pan over medium flame.

3. Fry the pakoras:

  • Take small portions of the batter, shape them into rough rounds or fritters, and gently drop them into the hot oil. Fry until golden brown and crisp.

4. Drain and serve:

  • Remove the pakoras from the oil and place them on absorbent paper to remove excess oil.

5. Enjoy:

  • Serve hot with vrat-friendly green chutney or a side of fresh curd.
