Ingredients

For the crust:

  • 1½ cups digestive biscuits/graham crackers
  • ⅓ cup melted butter
  • 1 tbsp sugar

For the filling:

  • 2 cups cream cheese
  • 1 cup whipping cream
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup mango puree
  • 2 tsp gelatin (or agar-agar for veg option)
  • 3 tbsp warm water

For the topping:

  • ¾ cup mango puree
  • 1 tsp gelatin + 2 tbsp warm water
  • Mango slices for garnish

How to make at home:

  1. Take a bowl and crush digestive biscuits into crumbs using a food processor or zip-lock bag technique.
  2. Mix the melted butter to make a good base for cheesecake.
  3. Now press the crushed biscuits properly in the base to level it smoothly.
  4. Let it freeze for 30 minutes for a set base.
  5. Now, whip the cold cream properly until smooth.
  6. In a separate bowl, beat the cream cheese.
  7. Add powdered sugar along with vanilla essence for flavour.
  8. Add mango puree and mix well.
  9. Mix gelatin in warm water and let it bloom for 5 minutes, then mix properly.
  10. Fold in the whipped cream gently until well combined.
  11. Pour the filling over the chilled crust and smooth the top.
  12. Refrigerate the cake for 5 hours to set completely.
  13. Add chopped mango along with puree on top and garnish with mint leaves.
  14. Slice, serve chilled, and enjoy the tropical goodness.
