You don’t need an oven to enjoy this wholesome bread either! With just a few simple ingredients and a bit of creativity, you can make delicious sourdough bread using your pressure cooker. This method is perfect for those who want to enjoy fresh, homemade bread without the need for traditional baking equipment. Here’s a recipe of sourdough bread you can make at home in a pressure cooker.

Ingredients for making sourdough

2 cups all-purpose flour
1 cup whole wheat flour
1 ½ cups warm water (approximately 40°C)
1 tsp sugar
1 tsp salt
2 tsp instant yeast
1 tbsp lemon juice or vinegar (for sourness)

Method for making sourdough

In a large bowl, combine the all-purpose flour, whole wheat flour, salt, and instant yeast.
In a separate bowl, mix the warm water, sugar, and lemon juice (or vinegar). Let it sit for about 5 minutes until slightly frothy.
Create a well in the centre of the dry ingredients and pour in the wet mixture. Mix until it forms a sticky dough.
Turn the dough onto a floured surface and knead for about 10 minutes, until it becomes smooth and elastic. If the dough is too sticky, add a bit more flour as needed.
Place the dough in a lightly oiled bowl, cover it with a damp cloth or plastic wrap, and let it rise in a warm place for 1 to 1.5 hours, or until it has doubled in size.
Punch down the dough to release the air. Shape it into a round loaf or a shape that fits your pressure cooker.
Grease a baking tin or a heatproof dish that fits inside your pressure cooker. Place the shaped dough into the tin.
Add 1-2 cups of water to the bottom of the pressure cooker (depending on the size of the cooker). Place a trivet or steaming rack in the cooker to keep the bread tin above the water.
Cover the bread tin with a cloth or foil. Let it rise for another 30 minutes, or until it has puffed up.
Place the bread tin on the trivet or steaming rack inside the pressure cooker. Close the lid of the pressure cooker without the pressure valve. Set the heat to medium-low and steam for about
45-60 minutes. Check for doneness by inserting a toothpick or skewer into the centre of the bread; it should come out clean.
Remove your cooked bread from the pressure cooker and allow to cool completely before eating!
