  • Besan (gram flour)
  • potato
  • ajwain
  • salt
  • red chilli powder
  • water

Method:

  1. Take a bowl and add besan along with water.
  2. Mix well to form a batter and add ajwain, salt, and chilli powder.
  3. Take a pressure cooker and boil potatoes properly.
  4. Make a mixture of potatoes with salt and red chilli powder for the filling.
  5. Now take two pieces of bread and fill them with potato filling.
  6. Dip the bread in besan batter properly.
  7. Take a kadhai and deep fry the pakoda until golden brown.
  8. Serve hot with mint chutney or ketchup.

2. Classic Onion Pakoras

Method to prepare:

  1. Place sliced onions in a bowl. Add salt and let it sit for 5 minutes to release moisture.
  2. Add besan, spices, green chillies, and ajwain. Mix well.
  3. Add a little water to form a thick batter, coating the onions.
  4. Heat oil. Drop small clumps into hot oil and fry until golden brown.
  5. Serve hot with mint chutney or tamarind sauce.

3. Spicy Corn Chaat

Ingredients:

  • 1 cup sweet corn kernels
  • 1 small onion, finely chopped
  • 1 small tomato, chopped
  • 1 green chilli, chopped
  • 1 tbsp lemon juice
  • ½ tsp chaat masala
  • Salt – to taste
  • Fresh coriander leaves
  • Butter – 1 tsp

Method to prepare:

  1. In a pan, sauté the corn in butter for 2-3 minutes.
  2. Add onions, tomato, chilli, salt, and chaat masala.
  3. Mix well, remove from heat, and add lemon juice and coriander.
  4. Serve warm as a tangy monsoon delight.

4. Aloo Tikki

Ingredients:

  • 3 medium potatoes, boiled and mashed
  • 1 green chilli, finely chopped
  • 1 tsp ginger paste
  • ½ tsp cumin powder
  • ½ tsp amchur
  • 2 tbsp cornflour or breadcrumbs
  • Salt
  • Oil

Method to prepare:

  1. Mix mashed potatoes with all spices, green chilli, and cornflour.
  2. Shape the mixture into small tikkis.
  3. Heat oil in a pan and shallow fry on both sides until golden brown.
  4. Serve hot with green chutney or curd.
