Ingredients:

1 cup kuttu (buckwheat) flour
1/2 cup water
1/4 cup grated potatoes
1/4 cup finely chopped coriander leaves
1 green chili (finely chopped, optional)
Salt to taste (use sendha namak)

Procedure:

 Mix kuttu flour with water to form a smooth batter.
Add grated potatoes, coriander leaves, and green chili (if using).
Heat a non-stick pan and pour a ladleful of batter to spread into a cheela.
Cook until golden brown on both sides.

3. Kachalu Chaat

Ingredients:

2 medium-sized kachalu (colocasia/taro root)
1 tablespoon ghee
1/2 teaspoon cumin seeds
1/4 teaspoon black pepper
1/4 teaspoon chaat masala (check if allowed, or use rock salt)
1 tablespoon lemon juice
Fresh coriander leaves for garnish

Procedure:

4. Makhana Kheer

Ingredients

1 cup makhana (foxnuts)
2 cups milk
1/4 cup sugar (or to taste)
1/4 teaspoon cardamom powder
A few saffron strands (optional)

Procedure

Heat milk in a pan until it begins to simmer.
Add makhana and cook for 10 minutes.
Add sugar and cardamom powder. Stir well and cook for another 5 minutes.

1 cup curd

Procedure

Spoon curd into a bowl.
