Matar Pulao Recipe

Ingredients:

  • 2 tbsp oil
  • 6 cloves
  • 1 bay leaf
  • 1 inch cinnamon
  • 1 black cardamom
  • 1 tsp cumin
  • 1 tsp pepper
  • 1 javetri
  • 4 pods cardamom
  • 2 tbsp cashew
  • 5 chillislit
  • 2 cloves garlicfinely chopped
  • 1 inch gingerfinely chopped
  • ½ onionsliced
  •  cup peas
  • 1 tsp salt
  • 2 cup water
  • 1 cup basmati ricesoaked 20 minutes
  • 2 tbsp lemon juice
  • 1 tsp ghee

Instructions:

Carefully follow these steps to prepare perfect matar pulao in just 45 minutes!

  1. Heat 2 tablespoons of oil in a kadai and sauté the spices until aromatic.
  2. Add 2 tablespoons of cashews and sauté until they turn golden brown.
  3. Next, add the 5 slit chillies, 2 cloves of garlic, 1 inch of ginger, and ½ a sliced onion. Sauté until the onion softens.
  4. Add 1½ cups of peas and 1 teaspoon of salt, then stir-fry the mixture.
  5. Pour in 2 cups of water and bring it to a boil.
  6. Once the water boils, add 1 cup of basmati rice, 2 tablespoons of lemon juice, and 1 teaspoon of ghee. The lemon juice ensures the rice cooks uniformly.
  7. Give everything a good stir. Cover the kadai and simmer for 20 minutes.
  8. After cooking, fluff the rice gently, ensuring the grains remain intact.
