Sugarcane Juice Kheer recipe

The recipe is simple but incredibly flavourful. Sugarcane Juice Kheer is a deliciously refreshing way to enjoy the goodness of sugarcane juice.

Ingredients

4 cups sugarcane juice
1 cup cooked rice
1/2 tsp cardamom powder
1/4 cup raisins
1/4 cup cashews
1 tsp ghee
A pinch of black salt

Method

Combine the sugarcane juice and cooked rice in a pan and bring it to a boil.
Lower the heat and let it simmer for about 10 minutes, allowing the sugarcane juice to thicken and become slightly syrupy.
Stir in the cardamom powder.
In a separate pan, heat the ghee and fry the raisins and cashews until they turn a light brown. (To keep it vegan, you can skip this step and avoid using ghee.)
Add the fried raisins and cashews to the kheer, followed by a sprinkle of black salt. Stir everything together.
Refrigerate the kheer and serve chilled.

Traditionally, it was kept in earthen pots immersed in water to cool.
