Ingredients
For the Chicken Marinade:
- 500g boneless chicken (preferably thigh pieces)
- ½ cup thick curd/yoghurt
- 1 tbsp ginger-garlic paste
- 1 tsp red chilli powder
- 1 tsp garam masala
- ½ tsp turmeric powder
- 1 tsp lemon juice
- Salt to taste
For the Gravy:
- 2 tbsp butter
- 1 tbsp oil
- 1 tsp cumin seeds
- 1 bay leaf
- 1 black cardamom
- 1-inch cinnamon stick
- 2 onions
- 1 tbsp ginger-garlic paste
- 3 large tomatoes
- 1 tsp red chilli powder
- 1 tsp coriander powder
- Salt to taste
- 1 tsp sugar
- ½ cup fresh cream
- 1 tbsp kasuri methi
- 2 tbsp butter
- Chopped coriander
Steps to prepare at home:
- Take a bowl and add chicken with yoghurt, lemon juice, spices and salt and marinate it for 1 hour.
- Grill or pan-fry the marinated chicken until it is half-cooked and set aside.
- Take a pan and heat oil and butter. Now add cumin, bay leaf, cardamom and cinnamon, followed by chopped onions.
- Stir ginger-garlic paste, along with tomato puree, red chilli powder, coriander powder and sugar. Cook until the oil separates.
- For a silky restaurant-like texture, cool the mixture slightly and blend it until smooth. Return to the pan.
- Add cream, butter and kasuri methi and stir well. Now add cooked chicken pieces and let it simmer for 10 minutes.
