Ingredients for Oats Dosa
- ½ cup quick-cooking oats or rolled oats
- ¼ cup rice flour
- ¼ cup rava (sooji/cream of wheat/semolina)
- ½ cup curd (yoghurt)
- ¼ cup finely chopped onions or 1 small onion, finely chopped
- 1 teaspoon finely chopped ginger
- 1 teaspoon finely chopped green chillies
- 1 to 1.5 tablespoons chopped coriander leaves (cilantro)
- 7 to 8 curry leaves, or 1 tablespoon finely chopped
- ½ teaspoon cumin seeds
- ¼ teaspoon black pepper, crushed in a mortar and pestle
- 1 to 2 tablespoons grated coconut (optional)
- 1.25 cups water (adjust as needed)
- Salt, as required
- Oil, ghee, or butter, as required
How to Make Oats Dosa
Follow these steps carefully to prepare the perfect oats dosa at home!
Step 1: Preparing the Batter
- Start by grinding the oats in a mixer or grinder to form a fine flour. Transfer it to a mixing bowl.
- Add the rice flour and rava.
- Mix in the curd—either fresh or sour. If using sour curd, add ¼ cup and increase the water slightly to achieve the right consistency. If you prefer a milder taste, use ¼ cup of fresh curd.
- Pour in 1 cup of water and stir until you achieve a smooth, lump-free batter. If using rolled oats flour, you may need slightly more water.
- Add the finely chopped onion, ginger, green chillies, coriander leaves, and curry leaves.
- Stir well, then add cumin seeds, crushed black pepper, and salt to taste. If you want a more authentic flavour, add 1 to 2 tablespoons of freshly grated coconut.
- Mix everything thoroughly and let the batter rest for 10 minutes.
- After 10 minutes, check the consistency and add ¼ cup of water if needed. You may add up to 1.5 cups of water in total, depending on the thickness of your curd.
- The batter should be thin, watery, and flowing—similar to rava dosa batter.
Step 2: Cooking the Oats Dosa
- Heat a cast-iron or non-stick pan over a medium flame. Drizzle ½ to 1 teaspoon of oil and spread it using a spoon.
- Stir the batter, then take a ladleful and pour it from the edges of the pan towards the centre.
- Unlike regular dosa, do not spread the batter with the back of the ladle. Instead, let it naturally spread, filling any small gaps with a bit more batter.
- Drizzle some oil around the edges and into any small gaps. Let the dosa cook until the base turns crisp and golden.
- Flip and cook the other side until crisp.
- If you prefer a crispier dosa, flip it again and cook for a little longer before folding and removing it from the pan.
- Transfer to a plate and serve hot.
