  • 1 tsp cumin seeds
  • 1 tsp grated fresh ginger

  • ½ tsp coriander powder
  • ¼ tsp black pepper powder
  • Salt, to taste
  • 4 cups water
  • Fresh coriander leaves, chopped

  1. Take a deep pan or pressure cooker and add oil, cumin seeds and let it splutter.
  2. Add grated ginger and chopped tomato, and cook until the tomatoes soften.
  3. Stir in turmeric, coriander powder, and black pepper.
  4. Pour in the moong dal, brown rice, and mixed vegetables. Stir for a minute to coat everything in the spices.
  5. Add 4 cups of water and salt.
  6. For the pressure cooker, close the lid and cook for 3 whistles on medium flame.
  7. For a deep pan boil the khichdi for 20 minutes on a medium-low flame.
  8. Once soft and porridge-like, stir in the chopped spinach and cook 2 minutes more.
