- 1½ cups (180 g) all-purpose flour
- 1 cup (200 g) granulated sugar
- 2 large eggs, room temperature
- ½ cup (120 ml) milk
- ½ cup (115 g) unsalted butter, melted & cooled
- 1½ tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 1 tsp vanilla extract

- 1 large stovetop pressure cooker (3–5 L capacity)
- 1 cake pan (8–9 inch round, 2 inch deep)
- 1 trivet or a ring of rolled-up aluminium foil
- Mixing bowls and a hand whisk (or an electric beater)
- Parchment paper or butter, and flour
Step-by-step guide:
- Remove the gasket and whistle from the pressure cooker lid, then place a trivet or foil ring at the bottom.
- Grease and flour an 8–9-inch cake pan, or line it with parchment paper.
- In a bowl, sift together 1½ cups flour, 1½ tsp baking powder, ½ tsp baking soda, and a pinch of salt twice.
- In a separate bowl, whisk 2 large eggs with 1 cup sugar until pale and ribbon-like.
- Stir in ½ cup melted butter and 1 tsp vanilla extract until smooth.
- Fold one-third of the dry mix into the egg mixture, then add a third of ½ cup milk. Repeat—dry, milk, dry—folding gently to avoid deflating the batter.
- Transfer the batter into the prepared pan and tap it lightly on the counter.
- Heat the empty pressure cooker on medium for 2 minutes with the lid on.
- Place the cake pan on the trivet, cover the cooker, and reduce the flame to low. Let it cook undisturbed for 35–40 minutes.
- Insert a toothpick in the centre—if it comes out clean or with a few crumbs, it’s done. If not, cover and bake for another 5 minutes.
- Remove the pan and let it rest 10 minutes before unmolding onto a wire rack.
