Amla Murabba is a nutritious and delicious made by soaking amla in jaggery syrup, offering a perfect blend of sweetness and tang.

Ingredients for Amla Murabba with Jaggery:

Amla (Indian gooseberries) – 7 (250 grams)
Jaggery – 1.25 cups (300 grams) (crumbled)
Lemon – 1

How to make Amla Murabba with Jaggery:

Wash the amlas thoroughly and let them dry.
Steam the Amlas
In a pot, bring 2 cups of water to a boil. Cover it so that the water boils faster. Once the water is boiling, place a strainer over the pot and put the amlas in it. Cover and steam the amlas on medium heat for about 8 minutes.
After steaming, the amlas will become soft. Turn off the heat and remove the amlas. Place them on a plate to cool quickly. Once cooled, make small holes in the amlas using a fork and then place them in an airtight container. Add the crumbled jaggery over the amlas and close the container. If you get direct sunlight, keep the container in the sun for 2 days; otherwise, just store it at room temperature. As the jaggery melts, it will form syrup.
Thicken the Syrup
After 2 days, the amlas will release a good amount of juice, and the jaggery will form a nice syrup. However, the syrup might be thin. To thicken it, place the amlas with the syrup in a pan and cook it for a few minutes until the syrup thickens.
Check the syrup by dropping it from a spoon; if it drips slowly, it’s ready. This thickening process will take around 5 minutes.
Once the syrup is thickened, let the murabba cool down. After cooling, add lemon juice to it and transfer the murabba into a bowl.

Tips:

Use large-sized amlas for a milder taste.
Always clean the container with hot water and dry it well in the sun before storing the murabba.
If you prefer, you can also make the murabba by leaving it in the sun instead of thickening the syrup. However, this will take about 15 to 20 days. Sun drying helps the juice of the amlas to dry and the syrup to thicken.
Lemon juice is added for a slight tanginess to balance the sweetness of the murabba.
For extra flavour, you can add a pinch of black pepper and black salt, which will enhance the taste of the murabba.
Steaming the amlas helps retain their nutritional value.
To store the murabba for a longer time, ensure the amlas are fully submerged in the syrup. If the syrup runs low, prepare some extra jaggery syrup and add it.
