  • Salt, oil, and coriander leaves for garnish

Method:

  1. Soak soya chunks in hot water for 15 minutes, then squeeze and rinse.
  2. Sauté cumin seeds in oil, add onions, and cook till golden.
  3. Add ginger-garlic paste, tomato puree, and spices. Cook till the oil separates.
  4. Add soya chunks, 1 cup water, and simmer for 10 minutes. Garnish with coriander.

2. Soya Tikki

Ingredients:

  • 1 cup boiled soya granules
  • 2 boiled potatoes
  • 1 small onion
  • Bread crumbs, green chillies, coriander, salt, and spices

Method:

  1. Mix all ingredients into a firm dough.
  2. Shape into small tikkis.
  3. Shallow fry till golden brown on both sides.

3. Soya Bhurji

Ingredients:

  • 1 cup soya granules
  • 1 onion, 1 tomato, 1 capsicum
  • Ginger-garlic paste, turmeric, garam masala, salt

Method:

  1. Sauté onion, ginger-garlic paste, and vegetables in oil.
  2. Add spices and mix in the soya granules.
  3. Cook for 5-6 minutes until dry and fragrant.
